  • 1 pound lean ground beef Use lean for a healthier option.
  • 4 large eggs Whisked before adding to skillet.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil For sautéing.
  • Fresh parsley for garnish

Cooking

  • In a skillet, heat olive oil over medium heat.
  • Add chopped onion and garlic, sauté until soft.
  • Add ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned.
  • In a bowl, whisk the eggs and then pour them over the beef mixture in the skillet.
  • Stir gently to combine, cooking until eggs are set.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

Serve hot from the skillet, great with toast or a side salad. Store leftovers in an airtight container in the refrigerator for 2-3 days.
