Ingredients
  

For the Power Bowl

  • 1 lb ground beef (lean)
  • 2 medium sweet potatoes, cubed
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 1/2 cup cottage cheese
  • 1 avocado, sliced
  • 1 tbsp balsamic glaze
  • 2 green onions, chopped
  • Olive oil for roasting

Preparation

  • Preheat your oven to 400°F (200°C). Toss the sweet potato cubes with olive oil, paprika, salt, and pepper in a bowl.
  • Spread them out on a baking sheet and roast for 25–30 minutes until they are tender and golden.

Cooking

  • While the sweet potatoes are roasting, heat a skillet over medium heat. Add the ground beef and cook until it is browned. Season with salt and pepper to taste.

Assembly

  • Once the sweet potatoes are ready, it’s time to assemble your bowls. Start with a base of ground beef, then layer on the roasted sweet potatoes, cottage cheese, and sliced avocado.
  • Drizzle some balsamic glaze over the top and sprinkle with chopped green onions for added flavor and crunch.

Notes

To store leftover Power Bowl, place it in an airtight container and keep it in the refrigerator. Best eaten within 3 to 4 days. Store the avocado separately to keep it fresh. Consider adding spices like cumin or chili powder to the ground beef for extra flavor. Experiment with different toppings such as feta cheese, chopped cilantro, or hot sauce.
