Preparation

  • Chop all your veggies and prepare your ingredients.

Cooking

  • In a large pot over medium heat, add a splash of olive oil and sauté the diced onions, carrots, celery, and minced garlic until softened and fragrant, about 5-7 minutes.
  • Add the ham steak to the pot and cook for a few minutes, allowing the edges to brown slightly.
  • Stir in the white beans, thyme, black pepper, and chicken broth. Mix well.
  • Raise the heat and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.
  • Taste the soup and adjust the seasoning with salt as needed.
  • Ladle the soup into bowls and serve hot.
  • Optionally, sprinkle chopped parsley or add a dash of hot sauce on top.

Notes

Ham and Bean Soup is great on its own, but pairs well with crusty bread, buttermilk biscuits, or a green salad. Leftovers can be stored in an airtight container in the fridge for about 3-4 days.
