Preparation

  • Chop the onion, carrots, and celery into small, bite-sized pieces.
  • In a large pot over medium heat, add a splash of olive oil and sauté the chopped onions, carrots, and celery until soft (about 5-7 minutes).
  • Add the minced garlic and cook for about one minute, stirring often.
  • Dice the ham steak into chunks and stir into the vegetables, allowing to cook for a few minutes.
  • Drain and rinse the canned white beans, then stir them into the soup.
  • Pour in the chicken broth, ensuring it covers all ingredients.
  • Season with salt, pepper, and thyme, then stir well.
  • Bring the soup to a gentle boil, then reduce heat and let it simmer for about 30 minutes.
  • Taste and adjust seasoning if necessary, and add crushed red pepper for an extra kick if desired.
  • Ladle the soup into bowls and serve hot, adding fresh herbs on top if desired.
