Ingredients

Main Ingredients

  • 2 cups cooked rice, chilled Using chilled rice is crucial because it helps the grains stay separate during cooking. Leftover rice from the day before works perfectly!
  • 1 cup diced ham Can use leftover ham from holiday dinners or store-bought diced ham.
  • 2 eggs, beaten These provide a lovely richness and help bind everything together.
  • 1/2 cup chopped cabbage Offers a delightful crunch and boosts the nutritional value.
  • 2 cloves garlic, minced Brings a wonderful depth of flavor.
  • 2 tablespoons soy sauce Adds saltiness and umami.
  • 1 tablespoon sesame oil Gives a lovely fragrance and richness.
  • to taste salt and pepper Essential for seasoning.
  • to taste green onions for garnish Adds fresh flavor on top.

Instructions

Preparation

  • Gather all your ingredients to make the cooking process smoother.
  • Ensure your rice is chilled and ready; if freshly cooked, spread it out on a baking sheet to cool.
  • Warm up a large skillet or wok over medium-high heat.
  • Add a bit of oil and toss in your diced ham. Sauté until lightly browned and fragrant.
  • Push the ham to the side of the pan, add the beaten eggs, and scramble until just set.
  • Add the minced garlic and chopped cabbage, cooking until the cabbage is tender-crisp.
  • Add the chilled rice, stirring gently to combine without smashing it.
  • Pour in the soy sauce and sesame oil, adding salt and pepper to taste, and stir everything together for a couple of minutes.
  • Optional: Garnish with green onions before serving.

Notes

Chill your rice to avoid mushiness, take your time to let the ham brown for better flavor, and feel free to add more veggies like peas or carrots. This dish pairs well with steamed broccoli or a crisp salad.
