  • 1 lb ground beef Lean ground beef preferred.
  • 1 medium onion, chopped Can substitute with shallots for a milder taste.
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 1 cup green beans, chopped Fresh or frozen.
  • 1 can diced tomatoes Use the juices for more flavor.
  • 1 cup corn Can be fresh or canned.
  • 2 medium potatoes, diced For heartiness.
  • 4 cups vegetable stock Enhances the soup flavors.

Spices

  • Salt and pepper to taste Add smoked paprika for an extra kick.
  • Garlic powder to taste

Instructions
 

Cooking

  • In a large pot, heat a tablespoon of oil over medium heat and brown the ground beef.
  • Add the chopped onion and cook until soft and translucent, about 3-4 minutes.
  • Stir in the chopped celery and carrots and let them cook for another 3-4 minutes.
  • Incorporate the green beans and corn, mixing them into the vegetables.
  • Pour in the can of diced tomatoes, juices included.
  • Mix in the diced potatoes, then pour in the vegetable stock and stir.
  • Bring to a boil, then reduce the heat to a simmer and let it cook gently for about 30 minutes.
  • Season to taste with salt, pepper, and garlic powder, adjusting as needed.
  • After simmering, taste again and adjust the seasonings if necessary.
  • Ladle the soup into bowls, and serve hot, optionally garnishing with fresh parsley.

Notes

For a richer flavor, ensure the beef is nicely browned. For thicker soup, simmer longer without a lid. Fresh herbs elevate the dish.
