  • 1 pack 15-bean mix Rinse and soak according to package instructions.
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 2 cups diced tomatoes
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • as necessary Corn muffins (for serving)

Instructions
 

Preparation

  • Rinse and soak the 15-bean mix according to package instructions.
  • In a large pot, sauté the onion, celery, and carrots until softened.
  • Add the minced garlic and cook for an additional minute.

Cooking

  • Stir in the soaked beans, diced tomatoes, broth, cumin, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 1-2 hours, or until beans are tender.

Serving

  • Serve hot, optionally with corn muffins on the side.

Notes

Soaking the beans overnight helps them cook faster and become more tender. Feel free to add other vegetables like bell peppers or spinach for added nutrition. Adjust the spices according to your taste preference. For a thicker soup, use an immersion blender to blend a portion of it before serving. This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
