  • 1 medium onion, chopped For that sweet and savory flavor.

  • 2 medium carrots, chopped Brings sweetness and bright color.
  • 1 can diced tomatoes A burst of acidity that balances the richness.
  • 6 cups vegetable broth Melds all the flavors together.
  • 1 teaspoon garlic powder Adds warm aroma and flavor.
  • 1 teaspoon thyme Enhances flavors without overshadowing.
  • to taste salt and pepper Essential for bringing out the flavors.

Preparation

  • Rinse your 15 bean mix thoroughly under cold water. Soak them in water overnight.
  • Chop the onion, celery, and carrots.

Cooking

  • In a large pot, heat a bit of oil over medium heat. Add the chopped onion, celery, and carrots, and sauté until softened (about 5-7 minutes).
  • Add the soaked beans and canned diced tomatoes into the pot.
  • Pour in the 6 cups of vegetable broth.
  • Sprinkle the garlic powder and thyme, along with salt and pepper to taste. Stir everything together.
  • Increase the heat until the soup starts to boil. Then, reduce the heat and cover the pot. Let it simmer for about 1 to 1.5 hours.
  • After an hour, check the soup and stir. Ensure the beans are tender but not mushy.
  • Taste the soup and adjust the seasoning if necessary.
  • Ladle into bowls and top with fresh herbs if desired. Serve hot.

Notes

Use fresh ingredients for better taste. Allow the soup to simmer fully and adjust thickness by adding more broth or letting it simmer longer. Serve with warm cornbread or a side salad for a complete meal.
