Herb Grilled Salmon

Ingredients
  

Herb Butter

  • 1/2 cup unsalted butter or vegan butter (softened) Use softened butter for easy mixing.
  • 2 teaspoons fresh chopped parsley Fresh herbs enhance the flavor.
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon lemon zest Adds brightness to the butter.
  • 1 clove garlic (minced or 1/2 teaspoon garlic powder)

Salmon Fillets

  • 4 pieces salmon fillets (4 ounces each)
  • 2 tablespoons avocado oil or olive oil Use for brushing the salmon.
  • 1 teaspoon kosher salt For seasoning the salmon.
  • 2 teaspoons Italian seasoning

Instructions
 

Prepare Herb Butter

  • In a small bowl, stir together the softened butter with parsley, kosher salt, lemon zest, and garlic.
  • Scoop the herb butter onto a piece of parchment paper or plastic wrap, roll it into a log about 2 inches in diameter, and twist the ends to close.
  • Chill overnight, or until firm. If short on time, place it in the freezer for 10-15 minutes to set.

Cook Salmon

  • Brush each piece of salmon with avocado oil and sprinkle with salt and Italian seasoning.
  • Heat a medium sauté pan over medium-high heat and brush it with the same oil.
  • Once hot and rippling, place the salmon, flesh and seasoning-side down on the pan, and sear for 3-4 minutes until golden and crispy.
  • Flip the salmon over, reduce heat to medium, and continue cooking for another 3-4 minutes.
  • Slice the prepared herb compound butter into thick rings and place one or two on top of each piece of salmon.
  • Continue to cook for 1-2 more minutes, until the internal temperature reaches 130°F for medium rare and the salmon flakes easily.
  • Serve the salmon right away with fresh chopped herbs and a squeeze of lemon.

Notes

Make sure to use fresh herbs for the best flavor. Leftover butter can be wrapped and frozen for up to 3 months. Salmon is best served right after cooking.
