Main Ingredients

  • 2 cups chopped leftover ham Use any leftover ham from your holiday feast.
  • 2 cups cooked and mashed potatoes Leftover mashed potatoes work perfectly.
  • 1 cup shredded cheese Cheddar or your choice of cheese.
  • 1 cup frozen mixed vegetables A mix of peas, carrots, and corn.
  • 1 cup milk Regular or dairy substitute.
  • 2 large eggs Bind the ingredients together.
  • Salt and pepper to taste Season according to preference.
  • 1 tablespoon olive oil or butter For greasing the baking dish.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil or butter.
  • In a large bowl, combine the chopped ham, mashed potatoes, shredded cheese, and mixed vegetables.
  • In another bowl, whisk together the milk, eggs, salt, and pepper. Pour this mixture into the ham and potato mixture and stir until well combined.
  • Pour the mixture into the prepared baking dish and spread evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is lightly browned.
  • Let cool slightly before serving.

Notes

You can serve this casserole warm right out of the oven with a side salad or crusty bread. For extra flavor, sprinkle cheese on top before serving. If you have leftovers, let them cool completely before storing them in the fridge or freezer.
