Ingredients

Dough Ingredients

  • 240 ml warm milk Should feel warm to the touch
  • 2.25 teaspoons active dry yeast To activate with warm milk
  • 100 grams granulated sugar
  • 115 grams unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon salt
  • 500 grams all-purpose flour
  • 240 grams mashed banana (from 2–3 medium bananas) Use ripe bananas for best flavor

Filling Ingredients

  • 115 grams unsalted butter, softened
  • 200 grams brown sugar
  • 16 grams ground cinnamon
  • 60 grams chopped walnuts (optional) Can also use pecans or almonds

Frosting Ingredients

  • 115 grams cream cheese, softened
  • 56 grams unsalted butter, softened
  • 180 grams powdered sugar
  • 2.5 ml vanilla extract

Instructions

Preparation

  • Combine warm milk, yeast, and granulated sugar in a large mixing bowl. Let it sit for about 5 minutes until it’s foamy.
  • Add melted butter, eggs, salt, and mashed banana to the yeast mixture. Gradually mix in the flour until a soft dough forms.
  • Transfer the dough to a lightly floured surface. Knead for about 10 minutes until it’s smooth and elastic. Place in a greased bowl, cover, and let rise in a warm area for 1 hour.

Filling and Shaping

  • In another bowl, mix softened butter, brown sugar, and ground cinnamon until smooth.
  • Roll the risen dough into a rectangle, about 50 x 35 cm. Spread the cinnamon-sugar filling evenly over the dough, and sprinkle with walnuts if desired.
  • Roll it up tightly along the long edge and cut into 12 equal pieces.

Baking

  • Place the rolls in a greased baking dish. Cover and let them rise for another 30 minutes while preheating your oven to 175°C.
  • Bake the rolls for 25-30 minutes, or until golden brown.

Frosting and Serving

  • To make the frosting, whip together cream cheese, butter, powdered sugar, and vanilla extract until smooth. Spread over the warm rolls before serving.
  • Serve warm, topped with the cream cheese frosting.

Notes

Store leftovers in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. For longer storage, freeze tightly wrapped in plastic.
