Ingredients
  

Cake Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Make sure it's softened for easier mixing.
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries If using frozen, do not thaw.

Lemon Glaze Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Use fresh lemon juice for better flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the eggs, one at a time, mixing well after each addition.
  • In another bowl, combine the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
  • Gently fold in the fresh blueberries.

Baking

  • Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the lemon glaze by whisking together powdered sugar and lemon juice until smooth.

Serving

  • Once the cake has cooled, drizzle the lemon glaze over the top before serving.

Notes

Best served warm or at room temperature. Enjoy it plain or with a scoop of vanilla ice cream.
