  • 2 tablespoons All-purpose flour Used for making the roux.
  • 1 cup Milk or cream Use cream for a richer dish.

  • a pinch Nutmeg Optional but enhances flavor.

Preparation

  • Wash the spinach thoroughly to remove any grit and drain it, then chop.

Sautéing

  • Melt butter in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.
  • Add minced garlic and sauté for another 1 minute until fragrant.

Making the Roux

  • Sprinkle the all-purpose flour over the sautéed onion and garlic, and stir for about a minute.

Preparing the Creamy Sauce

  • Gradually pour in the milk or cream while whisking constantly until smooth and slightly thickened.

Incorporating Spinach

  • Add in the chopped spinach and stir until it wilts, about 3-5 minutes.

Final Seasoning

  • Season with salt, pepper, and nutmeg to taste. Adjust seasoning as desired.

Final Touches

  • Let it simmer for an extra couple of minutes to meld flavors. Serve in a beautiful dish.

Notes

For best results, do not rush the sautéing process. You can use frozen spinach if short on time, just ensure to thaw and squeeze out excess water. Optional additions include grated Parmesan or lemon juice before serving.
