  • 1/4 teaspoon salt Enhances all flavors.
  • 4 cups milk Whole milk is preferred for richness, but lower fat options can be used.
  • 2 large eggs Helps thicken the pudding and gives it a custard-like base.
  • 1 teaspoon vanilla extract Adds warm flavor.
  • 1/2 cup whipped cream (optional) For extra indulgence on top.
  • serving Fresh fruit for topping (optional) Such as strawberries or berries for a refreshing contrast.

Preparation

  • Soak the tapioca pearls in water for about 30 minutes.
  • In a medium saucepan, combine milk, sugar, and salt and heat over medium, stirring gently until it begins to steam.
  • Drain the soaked tapioca pearls and add them to the steaming milk mixture, stirring frequently for about 10 to 15 minutes.
  • In a separate bowl, beat the eggs, then temper them by slowly adding in a bit of the warm milk mixture.
  • Gradually stir the egg mixture back into the pudding mixture and cook for another 5 minutes, stirring constantly.
  • Remove from heat and gently fold in the vanilla extract.
  • Allow to cool slightly, then serve warm or chilled with whipped cream and fresh fruit on top.

Notes

Keep stirring to prevent the tapioca from sticking to the bottom. For a creamier pudding, consider adding a splash of heavy cream. It can also be flavored with almond extract or coconut for a twist.
