  • 1.5 lbs baby potatoes, halved Choose baby potatoes that are similar in size for even cooking.
  • 6 slices thick-cut bacon, chopped Use thick-cut for a nice crunch.
  • 2 tbsp honey Adjust amount to suit your taste preferences.
  • 1 tbsp olive oil Used to coat potatoes.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the halved baby potatoes and olive oil, tossing to coat.
  • Spread the potatoes on a baking sheet.
  • In a pan, cook the chopped bacon until crispy, then drizzle the rendered bacon drippings over the potatoes.
  • Add honey to the potatoes and bacon mixture, and toss to combine.

Cooking

  • Roast in the oven for about 30-35 minutes or until golden brown and crispy, stirring halfway through.
  • Serve warm.

Notes

Garnish with fresh herbs like parsley or chives for a pop of color. For extra crunch, flip the potatoes halfway through the cooking time. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
