Instructions
 

Preparation

  • Preheat your oven to 425°F.
  • Chop the broccoli into florets, cube the sweet potatoes, and slice the red onion.
  • Drain and pat the chickpeas dry.

Combining

  • Toss chopped veggies and chickpeas in a large bowl with olive oil, salt, and pepper.
  • In a separate bowl, whisk together harissa paste, honey, minced garlic, cumin, and smoked paprika.
  • Pour the harissa sauce over the veggies and chickpeas and mix well.

Roasting

  • Spread the mixture on a baking sheet in a single layer.
  • Roast for about 25-30 minutes, stirring halfway through.

Serving

  • Once roasted, remove from the oven and sprinkle with fresh parsley and red pepper flakes.
