Salad Ingredients

  • 4 cups broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded sharp cheddar cheese Optional

Dressing Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste Salt and pepper

Preparation

  • In a large mixing bowl, combine the chopped broccoli, diced Honeycrisp apple, dried cranberries, pecans or walnuts, red onion, and shredded cheddar (if using).
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  • Pour the dressing over the salad ingredients and toss until everything is evenly coated.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Give the salad a final toss before serving. Enjoy chilled.

Notes

This salad is best served chilled. For extra crunch, add sunflower seeds or pumpkin seeds. For a lighter dressing, use Greek yogurt instead of mayonnaise. Cut the apple just before serving to keep it from browning.
