Ingredients
  

For the marinade

  • 1 tablespoon avocado oil or extra-virgin olive oil
  • 1/4 cup low-sodium soy sauce or coconut aminos or lite tamari
  • 2 tablespoons hot honey or more to taste
  • 4-5 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1 pinch red pepper flakes optional, for more heat

For the salmon

  • 1 pound salmon cut in 1" chunks, boneless, skinless

Instructions
 

Preparation

  • Cut the salmon into bite-sized chunks.
  • In a bowl, whisk together the avocado oil, soy sauce, hot honey, minced garlic, Dijon mustard, lemon juice, garlic powder, salt, and pepper. If you like extra heat, add the red pepper flakes.
  • Combine the marinade with the salmon chunks, stirring well until all pieces are coated. Let it marinate for about 15 minutes.

Cooking

  • Place the oven rack in the middle and preheat the oven to high broil.
  • Transfer the salmon and marinade onto a baking sheet.
  • Broil the salmon in the oven for 7-9 minutes or until it is fully cooked. Keep a close eye to avoid burning; you can switch to low broil if necessary.

Serving

  • Carefully remove the salmon from the oven and serve immediately over rice or your favorite side dish. Enjoy!

Notes

Make sure not to over-marinate the salmon, as the soy sauce can make it too salty if left too long. You can adjust the level of heat by adding more or less hot honey and red pepper flakes. If you prefer a crispy texture, try searing the salmon bites in a pan instead of broiling.
