Ingredients
  

For the bread

  • 115 g unsalted butter, softened Make sure it is softened for easy creaming.
  • 150 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs Can substitute with flax egg or applesauce.
  • 315 g all-purpose flour Measure correctly to avoid density.
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup mashed bananas Make sure they are well-drained if using frozen.
  • 1 cup crushed pineapple, drained Ensure it is well-drained.
  • 1/2 cup shredded coconut Adjust amount to preference.
  • 1/2 cup chopped pecans Can substitute with walnuts or leave out for nut-free.

For the Cream Cheese Frosting

  • 115 g cream cheese, softened
  • 60 g unsalted butter, softened
  • 250 g powdered sugar
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Fold in the mashed bananas, crushed pineapple, shredded coconut, and chopped pecans.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

Frosting

  • While the bread is cooling, prepare the cream cheese frosting by beating together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.

Serving

  • Once the bread has cooled, spread the cream cheese frosting on top.

Notes

Store the bread in an airtight container at room temperature for up to three days. For longer storage, wrap tightly in plastic wrap and refrigerate for about a week, or freeze for up to three months.
