Ingredients
  

For the Bread

  • 3 pieces ripe bananas, mashed Make sure they are very ripe for the best flavor.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup diced pineapple, patted dry
  • 1/2 cup chopped pecans Can be omitted for nut allergies.

For the Frosting

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, egg, and oil until well mixed.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the coconut, pineapple, and pecans.
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  • While the bread is baking, make the cream cheese frosting by beating together the cream cheese, powdered sugar, cinnamon, and vanilla extract until smooth.

Serving

  • Once the bread has cooled, spread the frosting on top and serve.

Notes

Serve this delicious bread warm or at room temperature. You can slice it and add a dollop of the cream cheese frosting on top or serve it on the side for guests to add as they wish. Store leftover bread in an airtight container at room temperature for up to 3 days. For longer storage, wrap in plastic wrap and freeze for up to 3 months. If frozen, let it thaw in the refrigerator overnight before serving. Make sure your bananas are very ripe for the best flavor and sweetness. Don't overmix the batter; stirring until just combined will keep the bread light and fluffy. For a fun twist, try adding some raisins or cinnamon chips to the batter. If you want a lighter frosting, you can use Greek yogurt in place of some of the cream cheese.
