Preparation

  • Prep your ingredients: Slice your mushrooms, chop your onions, and mince your garlic.
  • In a large pot, melt the butter over medium heat. Once sizzling, add the chopped onions and minced garlic. Stir occasionally until the onions are translucent (about 3-4 minutes).
  • Add the sliced mushrooms to the pot. Cook until tender and they release their moisture (about 5-7 minutes).
  • Sprinkle in the sweet Hungarian paprika and dried dill. Mix for about a minute for the spices to bloom.
  • Pour in 4 cups of broth; bring it to a boil then reduce heat to simmer for about 15 minutes.
  • Stir in the sour cream after simmering. Mix until creamy.
  • Taste and season with salt and pepper as needed.
  • Ladle the soup into bowls and garnish with chopped fresh dill and sprinkle paprika on top.

Serving

  • Serve up the soup and enjoy a cozy moment with loved ones.

Notes

To make the soup even more decadent, add a splash of white wine after sautéing the onions and garlic for extra flavor. For a thicker consistency, blend part of the soup after adding sour cream.
