  • 1/2 teaspoon black pepper For just a little kick!

Wet Ingredients

  • 1/2 cup milk This will give our batter that lovely moisture.
  • 1 large egg Adds richness and helps bind everything together.
  • 1/2 cup chopped onion Gives a lovely flavor; feel free to use green onions for a fresher taste.

Frying

Preparation

  • Start by gathering all your ingredients on the counter and measuring them out.
  • In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and black pepper. Stir with a whisk.
  • In another bowl, whisk together the milk and egg until well blended.
  • Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just mixed.
  • Fold in the chopped onion carefully.
  • In a deep skillet or frying pan, pour in enough vegetable oil to cover the bottom about an inch deep and heat it over medium heat.
  • To check if your oil is ready, drop a small spoonful of batter into the oil. If it sizzles and bubbles, you’re ready to fry.

Frying

  • Using a spoon or a small ice cream scoop, drop heaping spoonfuls of batter into the hot oil.
  • Fry for about 2-3 minutes on one side, then carefully flip them over to brown the other side.
  • Once cooked, use a slotted spoon to remove them and place them on paper towels to drain excess oil.

Serving

  • Enjoy these tasty bites while they’re warm!

Notes

Use a thermometer to check the oil temperature; it should be around 350°F. Let the batter sit for about 10 minutes before frying. Feel free to experiment with added ingredients like chopped jalapeños or herbs.
