Preparation

  • Gather all ingredients by chopping vegetables, cubing potatoes, and preparing the beef.

Cooking

  • Heat olive oil in a large pot over medium-high heat.
  • Brown the beef stew meat in batches until nice crust forms; do not crowd the pan.
  • Remove beef and sauté chopped onion and minced garlic until fragrant and translucent.
  • Stir in tomato paste, dried thyme, and bay leaf, cooking for a minute or two.
  • Return browned beef to the pot, scraping up any brown bits from the bottom.
  • Pour in the beef broth, ensuring all ingredients are covered.
  • Add sliced carrots and cubed potatoes, then bring the pot to a boil.
  • Once boiling, reduce heat to low, cover, and let simmer for about 2 hours.
  • Occasionally check and taste the stew, adjusting salt and pepper as necessary.
  • When beef is fork-tender and vegetables are soft, remove bay leaf and adjust other seasonings.
  • Serve the stew in bowls, accompanied by crusty bread or over mashed potatoes.

Notes

Browning the beef is crucial for flavor. If possible, let the stew simmer longer for even better taste. You can add other vegetables like green beans or parsnips as desired.
