Cooking Steps

  • Begin by warming your large pot over medium heat. Add the olive oil and let it heat up.
  • Cut the chuck roast into cubes and add them to the pot. Let the pieces sizzle and brown on all sides.
  • Once the meat is beautifully browned, toss in the chopped onions and cook until they are translucent and fragrant.
  • Stir in the sliced carrots and diced potatoes to absorb the flavor.
  • Pour the beef broth over the contents of the pot.
  • Add the dried rosemary, fresh thyme, and season generously with salt and pepper. Stir well.
  • Turn up the heat and bring everything to a boil. Then reduce the heat to a low simmer.
  • Cover the pot and let it simmer for about 2 hours.
  • After 2 hours, taste a piece of the meat to ensure it's tender enough. If not, give it another 30 minutes.
  • Once it's done, ladle the stew into bowls and serve hot.

Notes

For a richer flavor, add a splash of red wine along with the broth. To thicken the stew, remove the lid for the last 30 minutes of cooking. Pair with warm, crusty bread or a simple green salad. Leftovers taste even better the next day!
