Ingredients
  

Salad Ingredients

  • 4 cups shaved Brussels sprouts Fresh is preferred for better texture and flavor.
  • 1 cup cherry tomatoes, halved
  • 5 oz sliced salami Can be substituted with deli meat or omitted for vegetarian version.
  • 1 can chickpeas, drained and rinsed Roasting for extra crunch is optional.
  • 1/2 medium red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup shaved parmesan Can substitute with feta or goat cheese.
  • 1/4 cup Italian dressing or balsamic vinaigrette Store separately if making ahead to keep the salad crisp.

Instructions
 

Preparation

  • Toss all ingredients in a large bowl.
  • Drizzle with your favorite vinaigrette.
  • Top with shaved parmesan and cracked pepper.
  • Chill and serve fresh!

Notes

For a vegetarian version, skip the salami and add extra chickpeas or diced avocado. Store leftovers in an airtight container in the fridge for up to two days. Best served fresh.
