Ingredients

  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter, softened
  • 2 large Large eggs
  • 1 tsp Vanilla extract
  • 2 1/2 cups All-purpose flour Spoon into measuring cup for accuracy
  • 1 tsp Baking powder Check freshness
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Lemon zest Freshly grated for best flavor

For the glaze

  • 1 cup Powdered sugar
  • 2-3 tbsp Milk Adjust for desired consistency

Preparation

  • Preheat the oven to 350°F (175°C).
  • Line baking sheets with parchment paper.

Mixing Ingredients

  • In a large bowl, cream together ricotta cheese, granulated sugar, and softened butter until smooth.
  • Add eggs one at a time, then mix in the vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
  • Gradually mix the dry ingredients into the wet mixture until just combined.

Baking

  • Drop spoonfuls of dough onto baking sheets, leaving space between cookies.
  • Bake for 15-18 minutes, until edges are lightly golden.
  • Allow to cool on baking sheets for 5 minutes before transferring to a wire rack.

Preparing the Glaze

  • Whisk together powdered sugar and milk until smooth.
  • Drizzle the glaze over the cooled cookies.
