  • 1 lb Italian sausage (sweet or hot) Choose your favorite flavor.
  • 2 medium onions Sliced.
  • 3 cloves garlic Minced.
  • 2 cups assorted sweet bell peppers A mix of red, yellow, and green.
  • 14.5 oz fire-roasted tomatoes Regular diced tomatoes can be used as a substitute.
  • 1 cup tomato sauce For creating the sauce.
  • 1 tbsp oregano Fresh or dried.
  • 1 tbsp basil Fresh or dried.
  • 1 tsp red pepper flakes Adjust to taste.
  • 2 tbsp olive oil For sautéing.

Preparation

  • Gather and prep all ingredients: slice the onions and bell peppers, mince the garlic, and have your sausage ready.

Cooking

  • In a large skillet or sauté pan, heat the olive oil over medium heat.
  • Add sliced onions and minced garlic and sauté until the onions are translucent.
  • Add Italian sausage, breaking it up into smaller pieces if using sweet sausage. Brown for 5-7 minutes.
  • Stir in the assorted bell peppers and cook for 3-4 minutes until they start to become tender.
  • Pour in fire-roasted tomatoes and tomato sauce; mix everything together.
  • Season with oregano, basil, and red pepper flakes, adjusting the spice level to your preference.
  • Reduce heat to low, cover partially, and let simmer for 15-20 minutes to blend the flavors.
  • Taste and adjust seasoning as needed.

Serving

  • Serve generous portions into bowls over rice, pasta, or with crusty bread.
