Ingredients
  

Pasta and Protein

  • 12 ounces bow tie pasta Can substitute with any pasta shape
  • 1 lb Italian sausage Use spicy Italian sausage for heat if desired

Vegetables and Seasoning

  • 1 tablespoon olive oil For cooking the sausage and vegetables
  • 1 medium onion, diced Adds sweetness and flavor
  • 3 cloves garlic, minced Enhances aroma and taste
  • 1 red bell pepper, diced Adds color and sweetness
  • 1 yellow bell pepper, diced Can add other vegetables like zucchini or spinach
  • 1 14.5 oz can diced tomatoes Use with juices for best flavor
  • 1/2 cup chicken broth Adds moisture and flavor
  • 1 teaspoon dried basil Adds herbal flavor
  • 1 teaspoon dried oregano Enhances the dish with Italian herbs
  • to taste Salt and pepper Adjust to personal preference

Garnish

  • to taste Grated Parmesan cheese For serving

Instructions
 

Cooking the Pasta

  • Cook the bow tie pasta according to package instructions. Drain and set aside.

Cooking the Sausage

  • Remove the sausage from the skillet and set aside.

Cooking the Vegetables

  • In the same skillet, add the diced onion and bell peppers.
  • Cook until softened, about 5 minutes.
  • Add the garlic and cook for an additional minute until fragrant.
  • Stir in the diced tomatoes (with juices), chicken broth, dried basil, and dried oregano.
  • Bring to a simmer.

Combining Ingredients

  • Return the cooked sausage to the skillet.
  • Let it simmer for 5-7 minutes, allowing the flavors to meld.
  • Season with salt and pepper to taste.
  • Add the cooked bow tie pasta to the skillet and toss until well combined.

Serving

  • Serve hot, garnished with grated Parmesan cheese.

Notes

Best served hot. Pairs nicely with a green salad and garlic bread. For storage, keep in an airtight container in the refrigerator for 3 to 4 days. Reheat adding a little water or broth as needed. Can be frozen for 2-3 months.
