Pasta Ingredients

  • 8 oz Pasta (your choice)
  • 1 lb Italian sausage (dairy-free)
  • 2 cups Fresh spinach
  • 1 cup Mushrooms, sliced
  • 1 can (14 oz) Canned diced tomatoes

Flavor Enhancers

  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 2 tbsp Olive oil
  • Salt and pepper To taste
  • Fresh basil or parsley For garnish (optional)

Cooking Steps

  • Fill a large pot with water, add a pinch of salt, and bring to a rolling boil.
  • Toss the pasta in the boiling water and cook according to package instructions until al dente.
  • Drain the pasta and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onions and sauté until translucent, about 3-4 minutes.
  • Add sliced mushrooms and sauté until softened, about 2-3 minutes.
  • Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes.
  • Stir in the canned diced tomatoes and bring to a simmer, cooking for another 5 minutes.
  • Fold in the fresh spinach and gently toss until wilted.
  • Combine the cooked pasta with the sausage and sauce mixture, tossing well to coat.
  • Season to taste with salt and pepper, adding fresh herbs if desired.
  • Plate the pasta, topping with extra herbs and a drizzle of olive oil if desired.

Notes

Consider adding a splash of white wine to the tomatoes for added flavor. A sprinkle of dairy-free parmesan can enhance the dish nicely.
