  • 4 cups chicken broth This gives the soup a rich and comforting flavor.
  • 2 cups fresh vegetables (carrots, spinach, or bell peppers) Piling in a mix for added color and nutrition.
  • 2 cups pasta (any shape) Makes the soup even more filling!

Cooking Steps

  • In a large pot over medium heat, crumble the Italian sausage into the pot. Cook it until it’s browned and crumbly.
  • Add in the chopped onion and minced garlic. Stir them together and cook until the onion becomes translucent.
  • Stir in a can of diced tomatoes along with their juice.
  • Pour in the chicken broth and give everything a good stir.
  • Toss in your fresh vegetables.
  • Add your salt, pepper, and Italian seasoning.
  • Bring the pot to a boil, then reduce the heat and let it simmer for about 15 to 20 minutes.
  • Add the pasta to the pot and keep simmering until the pasta is cooked al dente.
  • Taste once more and adjust the seasoning if needed.
  • Serve the soup hot.

Notes

If you want an even richer flavor, feel free to brown the sausage a little longer. For a creamier soup, stir in a splash of heavy cream or a dollop of sour cream right before serving. Fresh herbs like basil or parsley can add a lovely touch of color and flavor!
