  • 1 cup Grape or Cherry Tomatoes Halved
  • 1 cup Bell Peppers Chopped (any color)
  • 1/2 cup Red Onion Chopped; soak in cold water if too strong
  • 8 oz Fresh Mozzarella Balls Use small-sized balls
  • 1/2 cup Pepperoncini Sliced, optional
  • 4 oz Salami Sliced or chopped
  • 1/4 cup Fresh Basil Chopped
  • 1/4 cup Fresh Parsley Chopped
  • 1/2 cup Zesty Italian Dressing Store-bought or homemade

Instructions
 

Cooking the Tortellini

  • Bring a large pot of salted water to a boil, add the cheese tortellini, and cook according to package instructions (typically 7-10 minutes) until al dente.
  • Once cooked, drain and rinse under cold water to stop the cooking process.

Chopping Ingredients

  • Chop the tomatoes, bell peppers, and red onion into bite-sized pieces.
  • Soak the chopped red onion in cold water for about 10 minutes if you prefer a milder taste.

Combining Ingredients

  • In a large mixing bowl, toss together the cooled tortellini, chopped tomatoes, bell peppers, red onion, and salami.
  • Add the fresh mozzarella balls and pepperoncini, mixing gently.

Finishing Touches

  • Add the chopped basil and parsley right before serving.
  • Drizzle with the zesty Italian dressing and gently toss to combine, ensuring not to mush the veggies.

Serving the Salad

  • Chill the salad in the fridge for at least 30 minutes before serving for the best flavor.
  • Toss again before serving and enjoy either plated or family-style.

Notes

Use cold water to rinse the tortellini after cooking to maintain firmness. Feel free to substitute the dressing for a balsamic vinaigrette or lemon garlic dressing for variation. Perfect as a side or main dish, especially with garlic bread or a fresh green salad.
