  • 1/2 cup zesty Italian dressing Adjust based on taste preference

Vegetables and Herbs

Protein

  • 1/2 cup salami Chopped into bite-sized pieces; can be omitted for vegetarian version

Instructions
 

Preparation

  • Cook the cheese tortellini according to package instructions and let it cool.
  • Chop the tomatoes, bell peppers, red onion, and salami into bite-sized pieces.

Mixing

  • In a large mixing bowl, combine the cooled tortellini, chopped vegetables, mozzarella balls, pepperoncini, and fresh herbs.
  • Drizzle with zesty Italian dressing and toss gently to combine.

Chilling

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve cold; garnish with extra fresh herbs or cheese. Pairs well with crusty bread or fresh fruit. Store leftovers in an airtight container for up to 3 days. If the salad seems dry, add more dressing before serving. For a vegetarian option, omit the salami.
