Ingredients
  

For the filling

  • 3-4 pieces fresh jalapenos Choose fresh and firm jalapenos for the best flavor and crunch.
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese Feel free to adjust the amount of cheese based on your preference.
  • 1 cup shredded Monterey Jack cheese
  • 4 slices cooked bacon, crumbled

For the sandwiches

  • 4 slices thick white bread
  • to taste none Butter For grilling

Instructions
 

Preparation

  • Preheat your grill or frying pan over medium heat.
  • Slice the jalapenos in half lengthwise and remove the seeds.
  • In a bowl, mix the softened cream cheese, cheddar cheese, Monterey Jack cheese, and crumbled bacon until well combined.
  • Fill each jalapeno half with the cheese mixture.

Assembly and Cooking

  • Assemble the sandwiches by placing the filled jalapenos between two slices of bread.
  • Butter the outside of the sandwiches.
  • Grill the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Remove from the pan, slice, and serve warm.

Notes

Serve your Jalapeno Popper Grilled Cheese hot and fresh off the grill, paired with tomato soup or a salad. For an extra kick, serve with hot sauce or sour cream. If you have leftovers, store in an airtight container for up to 2 days. Reheat to regain the crispy texture. Variations include using banana peppers for a milder option or adding diced tomatoes or avocado.
