  • 1 cup Shredded cheese (optional) Can use different varieties like pepper jack for spice.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Gather all the ingredients and ensure everything is ready.
  • Grab a large mixing bowl for easier mixing.
  • Combine Jiffy corn muffin mix, drained corn, creamed corn, sour cream, and melted butter in the mixing bowl, stirring until just blended.
  • If using, fold in shredded cheese.
  • Season with salt and pepper to taste.
  • Lightly grease a 9x13 inch baking dish and pour the mixture into it, spreading it evenly.
  • Bake for 45-50 minutes until the top is golden brown.
  • Let cool for a few minutes before serving.

Notes

Using fresh corn can enhance the dish. Avoid overmixing to maintain a light texture. For added flavor, consider experimenting with spices like paprika or garlic powder.
