Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated sugar

Filling

  • 4 large egg yolks
  • 1 can sweetened condensed milk (14 ounces)
  • 1/2 cup freshly squeezed key lime juice
  • 1 tablespoon key lime zest
  • to taste Whipped cream for topping (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom and up the sides of a pie dish. Bake for 8 minutes and then remove from the oven to cool.

Filling

  • In a separate bowl, whisk the egg yolks until they are light and frothy. Add the sweetened condensed milk, key lime juice, and lime zest, mixing until smooth.
  • Pour the key lime filling into the cooled crust and bake for an additional 15 minutes.

Chilling

  • Allow the pie to cool to room temperature, then refrigerate for at least 3 hours before serving.
  • Top with whipped cream if desired.

Notes

Use fresh key limes for the best flavor. Press the graham cracker crust firmly for stability. Avoid overbaking; it should be just set but slightly jiggly in the center. Cool completely before chilling for the best texture.
