  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste) Adjust based on spice preference
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • Green onions, chopped (for garnish)

Instructions
 

Cooking

  • In a skillet, cook the ground beef and chopped onions until browned.
  • Add minced garlic and grated ginger to the mix.
  • Stir in soy sauce, gochujang, brown sugar, rice vinegar, and sesame oil. Let it simmer for 5–7 minutes, until the mixture thickens.
  • Lightly toast the brioche buns to make them soft yet crispy.
  • Spoon the Korean beef mixture onto the toasted buns and top with chopped green onions.
  • Serve warm alongside pickled veggies or fries.

Notes

For added crunch, consider adding shredded cabbage or carrots inside the sandwich. If you have leftovers, store the beef mixture in an airtight container in the fridge for up to 3 days. Keep the buns separate to maintain their texture. You can prepare the beef mixture ahead of time and reheat it before serving.
