Ingredients
  

For the Chicken

  • 1 lb chicken breast, diced Boneless chicken recommended for tenderness.
  • 2 tablespoons soy sauce Brings a rich, salty flavor.
  • 1 tablespoon rice vinegar Adds a hint of tanginess.
  • 2 tablespoons cornstarch Helps the chicken stay juicy and provides a crispy exterior.
  • 2 tablespoons vegetable oil For cooking; high smoke point desired for stir-frying.

For the Vegetables

  • 1 red bell pepper, diced Adds color and sweetness.
  • 1 green bell pepper, diced Enhances visual appeal and adds crunch.
  • 3 green onions, chopped Fresh, sharp flavor.

For the Flavor

  • 1/2 cup peanuts Adds crunch and heartiness.
  • 3 cloves garlic, minced Adds an aromatic base.
  • 1 inch ginger, minced Provides warm spice.
  • 1 tablespoon hoisin sauce Adds depth of flavor.
  • 1 tablespoon sriracha or other hot sauce Customize based on spice preference.
  • 1 tablespoon sesame oil Adds nutty flavor at the end.

Instructions
 

Preparation

  • In a bowl, mix the diced chicken with soy sauce, rice vinegar, and cornstarch. Marinate for at least 30 minutes.
  • Chop the bell peppers, green onions, and mince garlic and ginger while the chicken is marinating.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add marinated chicken in a single layer. Let it sit for a minute before stirring, then cook until browned and cooked through, about 5-7 minutes.
  • Add minced garlic and ginger; stir continuously for about 1 minute until fragrant.
  • Add red and green bell peppers; sauté for 2-3 minutes.
  • Stir in hoisin sauce, sriracha, and sesame oil.
  • Add peanuts and green onions, and stir. Cook for another minute or two.

Serving

  • Taste and adjust seasoning if necessary. Serve hot with fluffy rice.

Notes

Marinate well for flavor. Don’t overcrowd the pan when cooking. Feel free to add more veggies or adjust spice levels as desired.
