Ingredients
  

For the Lamb Chops

For the Lobster Mash

  • 2 pieces lobster tails Fresh or frozen will work.
  • 4 large potatoes, peeled and chopped Will make a creamy and delicious mash.
  • 1/2 cup heavy cream Makes the mash rich and creamy.
  • 1/4 cup butter For added creaminess.

For the Asparagus

  • 1 bunch asparagus, trimmed Adds color and nutrition.
  • 1 tablespoon olive oil For roasting the asparagus.
  • to taste salt and pepper For seasoning the asparagus.

For Garnish

  • as needed lemon wedges A squeeze of lemon brightens everything up!

Instructions
 

Prepare the Lamb Chops

  • Season the lamb chops with salt, pepper, minced garlic, and rosemary.
  • Heat a skillet and add olive oil, then sear the lamb chops for about 3-4 minutes on each side until desired doneness.
  • Remove from heat and let them rest to allow juices to redistribute.

Cook the Lobster Tails

  • Bring a pot of salted water to a boil.
  • Cook the lobster tails for about 8-10 minutes until their shells turn bright red.
  • Remove the lobster meat from the shells and chop it finely.

Make the Mashed Potatoes

  • Boil the chopped potatoes in salted water until tender, about 15-20 minutes.
  • Drain and return the potatoes to the pot, then add heavy cream, butter, salt, and pepper.
  • Mash until smooth, then gently fold in the chopped lobster meat.

Prepare the Asparagus

  • Preheat the oven to 400°F (200°C).
  • Toss the asparagus with olive oil, salt, and pepper, and arrange them on a baking sheet.
  • Roast for about 12-15 minutes until tender.

Assemble the Dish

  • In the center of the plate, place a generous scoop of lobster mashed potatoes.
  • Arrange the lamb chops around the mash and lay the roasted asparagus on the side.
  • Garnish with lemon wedges.

Notes

For a crispy skin on lamb chops, ensure the skillet is hot before adding. Let the lamb sit at room temperature for 30 minutes prior to cooking for even results. Don't skimp on butter and cream for the mash!
