Ingredients
  

For the Cherry Mixture

  • 2 cups fresh or canned cherries, pitted
  • 1 cup granulated sugar Adjust based on the sweetness of cherries.
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

For the Batter

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Can substitute with plant-based milk for dairy-free.
  • 1/2 cup unsalted butter, melted Can substitute with dairy-free butter.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine cherries, sugar, cornstarch, and vanilla extract. Transfer the mixture to a greased baking dish.
  • In another bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  • Pour the batter evenly over the cherry mixture.

Baking

  • Bake for 45-50 minutes or until the top is golden brown and the cherries are bubbling.
  • Allow to cool slightly before serving.

Notes

Serve warm, optionally with vanilla ice cream or whipped cream. Store in refrigerator for 3-4 days or freeze for up to 2 months.
