Instructions
 

Preparation of the crust

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8 inch baking dish.
  • In a bowl, mix 1 cup all-purpose flour and 1/4 cup powdered sugar.
  • Cut in 1/2 cup unsalted butter until the mixture resembles coarse crumbs.
  • Press the mixture firmly into the bottom of your prepared dish.
  • Bake for 15 minutes.

Preparation of the filling

  • In another bowl, whisk together 2 large eggs, 1 cup granulated sugar, 2 tablespoons lemon juice, zest of 1 lemon, and 1/2 teaspoon baking powder until smooth.
  • Once your crust is ready, pour the lemon filling over it.
  • Return it to the oven and bake for an additional 20 minutes, or until set.

Final touches

  • Let it cool completely before dusting with powdered sugar.

Notes

Use fresh lemons for the best flavor; bottled lemon juice just doesn’t compare. Ensure your butter is soft for an easier mixing process and a better crust.
