Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour Gives structure and rise.
  • 1 tsp baking powder Leavening agent for fluffiness.
  • 1/4 tsp salt Enhances flavor.

Wet Ingredients

  • 1/2 cup granulated sugar Provides sweetness.
  • 1/4 cup unsalted butter, softened Adds richness and flavor.
  • 1 large egg Binds all ingredients.
  • 1/4 cup lemon juice Critical for zesty flavor.

For the Glaze

  • 1 cup powdered sugar Creates a sweet glaze.
  • 1-2 tbsp lemon juice Thins out the glaze to desired consistency.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a mini muffin tin.
  • Cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the egg and lemon juice, mixing until smooth.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually combine the dry ingredients with the wet ingredients until just mixed.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 12-15 minutes or until a toothpick inserted comes out clean.

Glazing

  • While the cakes cool, whisk together the powdered sugar and lemon juice to form the glaze.
  • Once the cakes are cooled, drizzle the glaze over the top.

Serving

  • Serve and enjoy the Lemon Blossoms either warm or at room temperature.

Notes

Using fresh lemons for juice is highly recommended for the best flavor. Allow cakes to cool for at least 10 minutes before glazing.
