Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan with butter or cooking spray. Consider using parchment paper for extra protection.

Mixing Dry Ingredients

  • In a medium bowl, combine all-purpose flour, baking powder, baking soda, and salt. Whisk them together.

Creaming

  • In a large bowl, cream together unsalted butter and sugar until light and fluffy.

Combining Ingredients

  • Add the egg, milk, fresh lemon juice, and lemon zest to the butter-sugar mixture. Mix until just combined.
  • Gradually add the dry ingredients to the wet mixture, folding gently.

Adding Blueberries and Baking

  • Gently fold in the fresh blueberries until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Glazing
