Brownie Ingredients

  • 1 box yellow cake mix (15.25 oz)
  • 1 box lemon instant pudding
  • 1/3 cup lemon juice
  • 2 large eggs
  • 1 teaspoon lemon zest For enhanced flavor

Glaze Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon lemon juice (for glaze)
  • Lemon zest for optional garnish For decoration if desired

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper and lightly coat it with cooking spray.
  • In a medium mixing bowl, blend together the cake mix, lemon pudding, lemon juice, eggs, and lemon zest until well combined.
  • Pour the batter into the prepared baking dish and spread it out evenly.

Baking

  • Bake for about 22 to 24 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.

Cooling and Glazing

  • Let the brownies cool in the pan for 10 minutes. Then, use the parchment paper to lift them out and let them cool completely on a wire rack.
  • Once cooled, cut the brownies into squares. For the glaze, whisk together the powdered sugar and the remaining lemon juice until smooth.
  • Drizzle the glaze over the brownies and finish with a sprinkle of lemon zest if desired.

Notes

Serve lemon brownies at room temperature. They pair well with coffee or tea. For an indulgent treat, top with whipped cream or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
