Ingredients
  

For the Brownies

  • 1 box yellow cake mix (15.25 oz) Use a standard 15.25 oz box.
  • 1 box lemon instant pudding Instant pudding is essential for texture.
  • 1/3 cup lemon juice Freshly squeezed is best.
  • 2 large eggs Room temperature recommended.
  • 1 teaspoon lemon zest Grated from the skin of a lemon.

For the Glaze

  • 1 cup powdered sugar Sifted for smooth consistency.
  • 1 tablespoon lemon juice For mixing in glaze.
  • as desired Lemon zest for garnish (optional) Use for a decorative touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare an 8” square baking dish with parchment paper and cooking spray.
  • In a mixing bowl, use a hand mixer to blend the cake mix, lemon pudding, lemon juice, eggs, and lemon zest until well combined.
  • Pour the batter into the prepared baking dish, smoothing it out evenly.

Baking

  • Bake in the preheated oven for about 22-24 minutes, checking with a toothpick until it comes out clean or with a few crumbs attached.
  • Let the brownies cool in the pan for about 10 minutes, then lift them out using the parchment paper to cool completely on a wire rack.
  • Once cooled, slice the brownies into squares.

Glazing

  • To prepare the glaze, whisk together the powdered sugar and lemon juice until smooth.
  • Drizzle the glaze over each brownie and sprinkle with additional lemon zest if desired.

Notes

Store in an airtight container at room temperature for 3-4 days, or refrigerate for up to a week. Can be frozen for longer storage.
