Ingredients
  

Main Ingredients

  • 2 pounds 2 pound side of salmon (1kg)
  • 1/3 cup butter Use unsalted for a better flavor.
  • 1/4 cup fresh lemon juice (or juice of 1 lemon) Freshly squeezed lemon juice is best.
  • 5 large cloves garlic (crushed) Use fresh garlic for best flavor.
  • 1 tablespoon brown sugar (optional) Adjust to taste; it enhances the flavor.
  • 1 pinch sea salt To taste.
  • 1 pinch cracked pepper Optional (to taste).
  • 2 tablespoons parsley (fresh chopped, divided)
  • 1 teaspoon dried dill
  • Lemon slices For garnishing.

Instructions
 

Preparation

  • Position a rack in the middle of the oven and preheat it to 375°F (190°C).
  • Line a baking tray or sheet with a large piece of foil large enough to fold and seal tightly.
  • In a small saucepan, melt the butter over low-medium heat.
  • Add the crushed garlic and cook for about 1 minute until fragrant.
  • Turn off the heat and whisk in the lemon juice and brown sugar if using.

Cooking

  • Place the salmon on the lined baking tray and season it with salt and pepper to taste.
  • Pour the lemon butter mixture over the salmon and spread it evenly.
  • Sprinkle the salmon with chopped parsley and dried dill, and arrange the lemon slices on top.
  • Fold the sides of the foil over the salmon to seal it well.
  • Bake in the oven for about 12-15 minutes until cooked through.
  • Carefully open the foil and grill or broil for an additional 2-3 minutes on medium heat for a nice finish.
  • Garnish with extra parsley if desired and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave until warmed through. For extended storage, consider freezing before cooking.
