For the Mousse

  • 1 cup heavy cream This is what gives the mousse its rich, creamy texture.
  • 8 oz cream cheese, softened Vital for that cheesecake flavor. Make sure it’s at room temperature to blend smoothly.
  • 1/2 cup powdered sugar For sweetness without the graininess of granulated sugar.
  • 1 cup lemon curd This brings in a wonderfully tart and citrusy flavor.
  • 1 teaspoon vanilla extract A little dash to deepen the flavors.

For Serving

  • Graham cracker crumbs (optional) These add a nice crunch and mimic the crust of a traditional cheesecake.
  • Lemon zest Adds a beautiful touch and enhances the lemon flavor.

Preparation

  • Whip the cream until you reach stiff peaks in a mixing bowl with a hand mixer.
  • In another bowl, beat the cream cheese with the powdered sugar until smooth.
  • Gently fold in the lemon curd and vanilla extract into the cream cheese mixture.
  • Fold in the whipped cream into the lemon mixture carefully to keep air in.
  • Spoon the mousse into serving glasses, filling them about three-quarters full.
  • Cover the glasses with plastic wrap and refrigerate for at least two hours.
  • Before serving, sprinkle with graham cracker crumbs and lemon zest.

Notes

This mousse can brighten up any meal and feels a little luxurious. Tastes even better after a day in the fridge as the flavors meld together.
