Ingredients
  

For the marinade

  • 2 lbs chicken pieces (drumsticks, thighs, or wings)
  • 2 units lemons (one juiced and one sliced)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp honey or sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp sesame seeds (for garnish, optional)

Instructions
 

Preparation

  • In a bowl, combine lemon juice, minced garlic, olive oil, soy sauce, honey (or sugar), salt, pepper, and paprika. Add chicken pieces and mix well. Marinate for at least 30 minutes or up to 6 hours in the refrigerator.

Cooking

  • Preheat the oven to 375°F (190°C).
  • Place sliced lemons in a baking dish. Arrange marinated chicken over lemon slices.
  • Bake for 30-40 minutes or until chicken is cooked through. Baste with marinade halfway through cooking.
  • Garnish with sesame seeds if using. Serve hot with rice or roasted vegetables.

Notes

Lemon Chicken is best served warm with rice or roasted vegetables. For extra flavor, let the chicken marinate overnight. You can add your favorite herbs and spices for more depth, such as thyme or rosemary. If you prefer a crisper skin, broil the chicken for a few minutes at the end of cooking. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
