  • 2 cups Roasted chicken, diced Use leftover roasted chicken to save time.
  • 1 cup Orzo pasta Adjust the amount based on serving size.
  • 1 medium Onion, diced
  • 2 stalks Celery, diced
  • 2 medium Carrots, diced
  • 2 cups Spinach, fresh Add at the end of cooking.
  • 6 cups Chicken broth
  • 1/4 cup Lemon juice Adjust according to taste.
  • to taste Salt
  • to taste Pepper

Preparation

  • In a large pot, combine the chicken broth and diced roasted chicken. Bring to a simmer.
  • Add the onions, celery, and carrots. Cook until the vegetables are tender.
  • Stir in the orzo pasta and cook according to package instructions.
  • Add the spinach and lemon juice towards the end of cooking.
  • Season with salt and pepper to taste, and serve hot.

Notes

Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Leave out the spinach when freezing. For a creamier soup, add a splash of cream at the end. A vegetarian version can be made by using vegetable broth and adding more vegetables.
