  • 1 each egg
  • 2 tablespoons lemon zest Use fresh for the best flavor
  • 2 tablespoons lemon juice Use fresh for the best flavor
  • to taste powdered sugar For dusting before serving

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cream the unsalted butter and granulated sugar together until fluffy.
  • Mix in the all-purpose flour until well combined.
  • Press the mixture into a baking pan.
  • Bake until golden brown, about 15-20 minutes.

Making the filling

  • In a separate bowl, whip together the cream cheese, egg, lemon zest, and lemon juice until smooth.
  • Pour the creamy lemon filling over the baked crust.
  • Bake again until the filling is set, about 15-20 minutes.

Cooling and Serving

  • Allow the squares to cool completely.
  • Slice into squares and serve chilled, dusting the tops with powdered sugar.

Notes

These squares are best served chilled or at room temperature. Ensure they are kept in an airtight container in the refrigerator for up to a week, or freeze them for longer storage. Allow to cool completely before cutting to prevent breakage.
