For the cake

For the glaze

  • 1 cup powdered sugar This will give the glaze its sweetness and smooth texture.
  • 2 tbsp fresh lemon juice To make the glaze tart and delicious, just like the cake!

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) to ensure your cake bakes evenly.
  • Grease and line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, combine the flour, baking powder, and salt. Whisk them together gently.
  • In a larger bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Crack in the eggs one at a time, mixing well after each addition.
  • Stir in the fresh lemon juice and lemon zest.
  • Begin adding the flour mixture and milk to the batter in three parts, alternating between them.
  • Pour the batter into the prepared pan and smooth the top with a spatula.

Baking

  • Bake the cake in the oven for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Glazing

  • While the cake is cooling, whisk together the powdered sugar and lemon juice until smooth.
  • Once the cake is slightly cooled, drizzle the lemon glaze over the top.

Notes

Make sure your butter is at room temperature for better creaminess. Use fresh lemon juice and zest for the best flavor. Don't skip the glaze!
